Mediterranean Couscous with Lamb 

Ingredients:

  • 2 x Couscous Packets 
  • 1 Chopped Red Onion
  • 1tsp Crushed Ginger
  • 1tsp cubed Cucumber
  • 1/2 Robot Peppers (1/2 Green Pepper,1/2 Red Pepper, 1/2 Yellow Pepper)
  • 1tbs Olive Oil
  • 1 Medium Onion Chopped
  • 1/2 Cup Mushrooms
  • 1 cup sliced fresh spinach
  • Baby Tomatoes
  • 2,5ml Dried Oregano
  • 1 tsp Parsley
  • Pnch of Black Pepper
  • Feta Cheese
  • Green and Black Olives

Meat: 

 Preparation: 

  1. Bring to boil water with salt to prep couscous. Once cooked put aside to cool down. 
  2. Chop vegetables and put aside 
  3. Marinade lamb and grill in oven till tender 
  4. Meanwhile heat the oil in the saucepan, onion, garlic, chilli, mushrooms, robot peppers, and fry until soft
  5. Add fried veges in the couscous, add raw vegetables and mix together evenly
  6. Add parsley, oregano, and black pepper
  7. Add olives and feta cheese
  8. Place grilled lamb in the couscous mixture and serve

 Side servings: Greek salad. Serves 4-6 people.
